Strawberry-Banana Muffins

Ingredients

1 cup fresh chopped strawberries
1 chopped ripe banana
2 cups Bisquick heart smart mix (I found this at Krogers)
2/3 cup 1 % milk (I used skim milk to save even more on fat)
1/3 cup sugar (I used Splenda to save even more calories)
1 egg

Beat egg, mix egg, sugar, milk and Bisquick in medium bowl. Add strawberries and banana. Fill 12 muffin tins, either sprayed with Pam or lined with paper. Bake in oven at 375 for 15-18 min. until lightly browned.
Makes 12 servings

I split the muffins in half and served them with fresh Splenda sweetened strawberries and topped with sugar free cool whip for a really delicious low calorie strawberry short cake. Everyone loved it!
